Ingredients:
- 1/2 pumpkin, peeled and cubed
- 3 small sweet potatoes, cubed
- 6 Dutch carrots, trimmed
- 2 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp dried thyme
- Salt and pepper to taste
Method:

Preheat oven to 200°C (400°F).

Toss pumpkin, sweet potatoes, and carrots with olive oil, paprika, thyme, salt, and pepper.

Spread them on a baking tray and roast for 30–40 minutes, turning halfway, until tender and caramelised.
