Pumpkin, Sweet Potato, and Dutch Carrot Roast

Ingredients:

Method:

  1. Preheat oven to 200°C (400°F).

  2. Toss pumpkin, sweet potatoes, and carrots with olive oil, paprika, thyme, salt, and pepper.

  3. Spread them on a baking tray and roast for 30–40 minutes, turning halfway, until tender and caramelised.
