Quick & Crunchy Snake Bean Stir-Fry

A fast and flavourful dish with garlic, soy, and chilli. Perfect as a side or tossed with noodles!

Ingredients:

  • 250g snake beans, cut into 5cm pieces
  • 2 tbsp vegetable oil
  • 3 garlic cloves, minced
  • 1 red chili, sliced (adjust for heat)
  • 1 tbsp soy sauce
  • 1 tsp oyster sauce (optional, for extra depth)
  • 1 tsp sesame oil
  • ½ tsp sugar
  • 1 tbsp water
  • Toasted sesame seeds (for garnish)

Instructions:

  1. Heat oil in a wok or large pan over high heat.
  2. Add garlic and chili, stir-fry for 30 seconds until fragrant.
  3. Toss in the snake beans and stir-fry for 3 minutes until bright green.
  4. Add soy sauce, oyster sauce, sesame oil, sugar, and water. Stir for another minute.
  5. Remove from heat and garnish with sesame seeds. Serve immediately.


💡 Tip: Add tofu or prawns for a heartier dish!


2. Snake Bean & Coconut Curry

🥥 A rich, spiced coconut-based curry inspired by South Indian flavors.

Ingredients:

  • 250g snake beans, cut into 5cm pieces
  • 1 tbsp vegetable oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tsp mustard seeds
  • 1 tsp cumin seeds
  • 1 tsp turmeric powder
  • 1 tsp garam masala
  • ½ tsp chili powder (optional)
  • 1 tomato, chopped
  • 200ml coconut milk
  • ½ cup water
  • Salt to taste
  • Fresh coriander (for garnish)

Instructions:

  1. Heat oil in a pan and add mustard and cumin seeds. Let them pop for a few seconds.
  2. Add onions and cook until soft, then stir in garlic.
  3. Add turmeric, garam masala, chili powder, and tomato. Cook for 2 minutes.
  4. Pour in coconut milk and water, bringing to a simmer.
  5. Add snake beans and cook for 5-7 minutes until tender but still crisp.
  6. Season with salt and garnish with coriander before serving.

3. Crispy Tempura Snake Beans

🍤 A fun, crispy snack served with a zesty dipping sauce.

Ingredients:

For the tempura batter:

  • ½ cup plain flour
  • ¼ cup cornflour
  • 1 tsp baking powder
  • ½ cup ice-cold soda water
  • ½ tsp salt

For the beans:

  • 200g snake beans, whole or cut into 10cm lengths
  • Vegetable oil (for deep frying)

For the dipping sauce:

  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • ½ tsp honey
  • ½ tsp sesame oil
  • ½ tsp grated ginger

Instructions:

  1. Heat vegetable oil in a deep pan (about 180°C).
  2. In a bowl, whisk together flour, cornflour, baking powder, salt, and ice-cold soda water to form a light batter.
  3. Dip snake beans into the batter and fry in batches for 2-3 minutes until golden and crispy.
  4. Drain on paper towels and sprinkle with a pinch of salt.
  5. Mix all dipping sauce ingredients and serve alongside the crispy tempura.
