BBQ WEEKEND YOUR WAY
As we move into a festive weekend, there are a few stunning centrepieces I would suggest.
Wild Tiger Prawns the size of your forearm— I actually think the flavour, texture, and sheer size of these beauties surpass a lobster any day of the week. Try them with a simple garlic, chilli, and parsley butter, and you are sure to impress!
The other one you cannot go past to please the masses is the Lamb Leg Butterflied—it should cover 6-8 guests with sides. I would whack it with either our Lebanese or Greek marinade if you’re playing it safe and traditional. Or, if you want something a little different, try it with our sticky Asian marinade and pair it with one of the flavour combos below for a touch of Asian persuasion.
MELON-RAMA
It’s my favourite time of year for melons. Hay, NSW, just started its season. It’s a tiny town, but it makes up for it with the punch it delivers in big melons! When I say big, I mean big in flavour—traditional varieties of rockmelon, watermelon, and yellow melons that make you think, Wow, this is what I remember a rockmelon tasting like!

Summer Pairings for Your BBQ

Watermelon, Mint, Lime, and Halloumi: Combine cubed watermelon and thick cucumber slices (2cm). Tear mint leaves and top with grilled halloumi. Dress with lime juice and a dash of olive oil.

Rocket, Peach, Parmesan, Prosciutto, and Buffalo Cheese: Layer rocket with peach wedges, tear parmesan, and chunks of cheese. Shake up a dressing with lemon juice, white wine vinegar, Dijon mustard, and olive oil, then pour over the top.
Asian Persuasion Pairing:

Cucumber, Mirin, Sesame: Slice the cucumber lengthwise, discarding the seeds. Combine with black and white sesame seeds and thinly sliced chilli (seeds removed). Make a dressing with:
- 350ml mirin
- 250ml rice wine vinegar
- 100ml raw soy sauce
- 50g grated ginger
- 50g finely chopped French shallot
