What better way to treat yourself with these local lobster tails. We have a simple recipe that packs a punch!
INGREDIENTS
4 tbsp butter
1 x long red chilli
1 x bunch chives - chopped fine
1 x lemon
4 tbsp olive oil
4 cloves garlic
1 handful curly parsley - chopped fine
Lobster tails
METHOD
1) Pre-heat BBQ to med - high heat.
2) In a bowl combine butter, garlic, red chilli, half the chives and parsley with 2 tbsp of olive oil.
3) Toss the lobster tails in the remaining olive oil. Place them on the BBQ - not on the direct heat. Cook for 10-15 mins with the lid down. Cook them until the meat starts to become white and near cooked.
4) Coat the flesh side of the lobster with the butter and garlic mixture. Place on the flat plate of the bbq and brown off the flesh and butter.
Once cooked remove from the heat and top with lemon juice and remaining herbs. Enjoy!
