INCLUDED

1 X Chicken cut in quarters
1 X Dimples Mexican Spice Paste
1 x Black Beans Can
1 x Red Capsicum
2 x Baby Brown onions
1 x Whole Corn
1 x Passata

PANTRY (NOT INCLUDED)

2 x cup long grain
1 x cup chicken stock or broth

Steps

1. Heat oven to 180c

2. Rub chicken with marinade - if possible leave to marinate overnight or for an hour. 

3. Heat 2 Tbls of olive oil in deep oven proof pan with lid, sear Chicken for 2 mins each side

4. Sautee onion, capsicum, once onion is translucent add the rice, black beans, passata and then stir to combine for 30 seconds.

5. Stock and passata, stirring to combine. Top with chicken, place lid on and put in oven covered for 25-30 mins. 

6. Remove lid and continue baking for 10-15 mins until almost all liquid has gone and rice is cooked. Resting uncovered for 5 - 10 mins 

Serve

As is - AKA - Burrito bowls - Any left over veg or salad in fridge - slice and serve alongside

Burritos - fry tortillas and strip chicken from bone combine with toppings for perfect burritos
