Lemon Roasted Wedges with Garlic Dipping Sauce

500g Baby Royal Blue Potatoes
1 Lemon
1 Garlic Dip
Preheat your oven to 180°C.
Toss the potato wedges with olive oil, salt and pepper. Spread the potato wedges out on a tray and roast for about 50 minutes, turning once or twice so they cookevenly with a golden crisp finish.
As soon as you take them out, squeeze the lemon over the potatoes and give them a quick toss. Serve while hot and add any other herbs/spices you prefer.
