How to
1. Toss the Lamb in the half of the Pinchito Marinade. The pan fry or BBQ on medium heat, until cooked. One minute before they are done add the remaining marinade. Rest for a couple of minutes and then finely slice.
2. Dice tomatoes and cucumbers, thinly slice the eschallot.
3. Drizzle a little olive oil over bread and pan fry - this is a non negotiable with this bread
4. Assemble your ingredients and then drizzle the mojo sauce over the top...
