-
½ tbsp oil (vegetable, peanut or canola)
-
¼ tsp salt
-
¼ tsp freshly cracked black pepper
🔥 Step-by-Step
1. Sear the beef
Heat a skillet until it’s screaming hot and smoking. Rub the steak with oil, season generously with salt and pepper, and sear for:
-
Medium-rare: 2 mins each side (internal temp 52 °C)
-
Medium: 2½ mins each side (internal temp 57 °C)
Transfer to a plate, loosely cover with foil, and rest for 10 minutes. Slice thinly against the grain just before serving.
2. Toss the salad
While the beef rests, toss the lettuce leaves with 1 tbsp of Dimples Dressing to lightly coat. In a separate bowl, combine the cherry tomatoes, red onion, cucumber, herbs and sliced beef. Drizzle with most of the remaining dressing and toss gently.
3. Assemble and serve
Pile the dressed lettuce onto plates, top with the beef and veggie mix, then scatter over the chopped peanuts. Finish with extra herbs and the last drizzle of Dimples Dressing.
