A one-tray feast that takes you straight to the heart of Lebanon! Succulent spiced chicken pairs perfectly with crispy Batata Harra potatoes for a hearty base. Brighten your plate with a refreshing side of melon, cucumber, and mint salad, topped off with creamy labne. It's a meal that's as vibrant as it is delicious ideal for those who crave bold flavours with minimal effort.

***(you only need half of the melon for the salad)***

1. Preheat the oven to 180c. Place potatoes in the bottom of the tray and lather with half of the marinade. Place chicken on top - skin side up. Lather with remaining marinade.

2. Place in the oven for 40 mins, or until juices run clear when poked with a fork, increase to 250c until the skin is crisp, approx 10 mins.

3. Remove skin from melon and cut in cubes rough sizing 2cm. Cut cucumbers to the same size, toss the melon with the cucumber and the mint leaves (roughly ripped)

4. Remove the chicken and rest, return potatoes to the oven to crisp further, approx 5 mins.

5. Serve; Squeeze lime juice on top and use a teaspoon to dollop the labne over the salad enjoy alongside your delicious potatoes and chicken.
