Lemongrass Chicken with Soba Noodles

1 x Chicken Free Range Thighs 500g
1 x Vietnamese Lemongrass Marinade
1 x Soba Noodles
1 x Bok Choy
1 x Shallots bunch
1 x Fried Eshallot


Steps

1. Brown off the mince and cook through. Stir through marinade for 1 minute over heat until reduces and caramelises on mince.

2. Boil water, cook noodles in boiling water. Then remove noodles, turn off heat and blanch the bok choy for 90 seconds in the water. 

3. Remove bok choy and toss through with noodles, pork mince and chopped asian herbs.
