Amalfi Summer Pasta - Rigatoni with Buffalo Cheese Basil Lemon and Guanciale

1 x Rigatoni 500g (Garofalo Rigatoni No.35)
1 x Dimples Secret Summer Cheese Blend
1 x Lemon
1 x Basil Bunch
1 x La Fattoria Guanciale 300g


1. Boil Pasta. At the same time zest the lemon. 

2. Slice the Guanciale into half cm strips or roughly dice. Crisp in a pan until golden.

3. Once the pasta is cooked, let it cool for 3 to 4 mins. Toss with cheese blend and basil, then add the lemon juice. Top with lemon zest and crisp Guanciale

Optional: Add chilli flakes, toasted pinenuts or both.
