- 
Prep the cucumbers: Slice cucumbers thinly and place in a large bowl. Sprinkle with a pinch of salt, toss gently, and let sit for 5 minutes to draw out excess water. Drain any liquid. 
- 
Build the salad: Add chilli to the cucumber. 
- 
Dress it up: Drizzle with the Dimples ginger & rice wine vinegar dressing. Toss gently until everything is coated. 
- 
Top & serve: Scatter over sesame seed mix and fresh coriander leaves just before serving.

Serve chilled as a side with our Beef Rendang 
- 
Add crushed roasted peanuts for extra crunch if you like. 
- 
Make it ahead: Prep everything and add the dressing + coriander just before serving to keep it crisp.
