  1. Prep the cucumbers: Slice cucumbers thinly and place in a large bowl. Sprinkle with a pinch of salt, toss gently, and let sit for 5 minutes to draw out excess water. Drain any liquid.

  2. Build the salad: Add chilli to the cucumber.

  3. Dress it up: Drizzle with the Dimples ginger & rice wine vinegar dressing. Toss gently until everything is coated.

  4. Top & serve: Scatter over sesame seed mix and fresh coriander leaves just before serving.
