Peri Peri Sausage Dogs with Corn

A fun, flavour packed twist on hot dogs, made for busy summer nights!
What’s inside 😋
• 500g pasture raised pork sausages (6 pack)
• 6 milk hot dog buns
• 200g pico de gallo mix
• 250g slaw mix
• 2 corn cobs
• 1 small chilli
• 1 lime
• Coriander bunch
• Peri peri marinade
• Chipotle mayo drizzle
Step 1, start cooking
Get your sausages cooking over medium heat on the BBQ or in a pan. At the same time, cook the corn either in boiling salted water or on the BBQ until tender and lightly charred.
Step 2, add the peri peri
Once the sausages are about 70% cooked, brush lightly with the peri peri marinade and continue cooking for a few minutes until glossy and just cooked through. Avoid high heat so the marinade doesn’t burn.
Step 3, prep while everything cooks
Deseed and finely slice the chillies, cut the lime into wedges, and set out the pico de gallo and slaw mix in separate bowls. Optional, shred coriander to use as a fresh finisher.
Step 4, warm the buns
Toast or pan fry the hot dog buns until warm and lightly golden.
Step 5, build and serve
Add sausages to the buns, drizzle with chipotle mayo, then let everyone top their own with pico de gallo, slaw, chilli, coriander, and a squeeze of lime. Serve with corn on the side.
