Sausage night done different! Greek inspired Pork Sausages. Light enough for summer and easy enough for any night of the week.
What’s inside 😋
• 500g pasture raised pork sausages (6 pack)
• Greek marinade
• 1kg Royal Blue Cocktail Potatoes
• Cherry Truss Tomatoes
• 2 Lebanese cucumber
• 1 Red onion
• 1 Lemon
Pantry items needed
• Olive oil
• Salt
• Pepper
• Optional, dried rosemary
Our quick and easy method
Step 1, roast the potatoes
Preheat oven to 200-220°C. Halve the mini cocktail potatoes and place on a baking tray. Drizzle with olive oil, season with salt and pepper, and toss to coat. Optional, sprinkle over a little dried rosemary. Roast for 25–30 minutes, turning once, until golden and tender.
Step 2, cook the sausages
While the potatoes are roasting, cook the pork sausages on the BBQ or in a pan over medium heat, turning regularly until cooked through.
Step 3, add the Greek mariande
During the last few minutes of cooking, brush the sausages lightly with the Greek marinade and cook until glossy and fragrant. Avoid high heat so the marinade doesn’t burn.
Step 4, make the salad
Slice the cherry tomatoes, cucumber, and red onion. Toss lightly with olive oil, a squeeze of lemon, salt, and pepper.
Step 5, serve!
Serve the Greek pork sausages with crispy lemon potatoes and fresh salad on the side. Finish with an extra squeeze of lemon if desired.

Chilli flakes, fennel seeds, garlic, lemon juice, oregano (dried), parsley (chopped), pepper (black), salt, Spanish onion, vegetable oil, dijon mustard
