Note: supplied raw and requires cooking.
- Preheat the oven to 160°C fan forced or 180c if not.
- Place shanks and potatoes in a tray and kaffir lime leaf, add one cup of water. Cover with foil and bake for 1 hour.
- Remove foil, add Curry Sauce, turn the shanks and potatoes, recover with foil and bake for a further hour.
- Remove foil and return to the oven for 1 hour to 90 mins, until the meat can be pulled apart with two forks. Turning the shanks every 30 mins. In the last 10 mins add water spinach (roughly chopped)
- Serve, garnishing with peanuts, thai basil, coriander and chopped chilli.
