Tandoori Barramundi with Fresh Mint Raita: A Quick Dinner Hero

Some dinners just hit that perfect sweet spot—bold flavour, minimal prep, and that "you’ve made this at home?" kind of vibe.

This week at Dimples, we’re bringing you a duo that delivers just that: fresh Aussie Barramundi and our pre-made Tandoori Marinade, ready to transform your weeknight meal into something special.

Barramundi is a mild, meaty white fish that takes on bold flavours beautifully, and with our house-made wet Tandoori marinade doing the heavy lifting, there’s almost no work involved. Just coat, cook, and enjoy.

How to Make It: Tandoori Barramundi (Dimples-style)

You’ll need:

  • 2 fresh Barramundi fillets

  • Dimples Tandoori Marinade (about 2–3 tbsp per fillet)

  • Olive oil or ghee for cooking

  • Lemon wedges, to serve

Method:

  1. Spoon the Tandoori marinade generously over your fillets and rub to coat. Let them sit for 15–20 minutes.

  2. Heat a drizzle of oil or ghee in a non-stick pan over medium-high heat.

  3. Cook the fillets for 3–4 minutes each side, or until cooked through and lightly charred.

  4. Serve hot with lemon wedges and a generous spoon of mint raita (see below!).


Fresh Mint Raita

This cool, creamy side is the perfect match for Tandoori anything. It takes 5 minutes, max.

Ingredients:

  • 1 cup Greek-style yoghurt

  • ¼ cup fresh mint leaves, finely chopped

  • ½ cucumber, grated (and squeezed to remove excess water)

  • ½ tsp ground cumin

  • Salt to taste

  • A squeeze of lemon

Method:

  1. Stir all ingredients together in a bowl until combined.

  2. Taste and adjust with extra mint or salt as you like.

  3. Chill until ready to serve.


Serving Ideas

Scoop it all onto a warm naan or plate it with a side of this weeks Biriyani rice and a fresh 
Kachumber Salad . However you serve it, this combo’s a keeper.
