500g beef mince

1 can black beans, drained & rinsed

1 packet corn chips (thick & sturdy ones work best)

1 cup grated cheese (cheddar or tasty mix)

1 bunch fresh coriander, chopped

Chipotle sauce (to taste)

Sour cream (for serving)

Guacamole (for serving)
Method

Cook the beef – Heat a pan with a drizzle of oil. Add the mince and cook until browned. Stir in the black beans and a good splash of chipotle sauce. Let it simmer for 5 mins so it gets rich and smoky.

Layer it up – On a large oven tray or baking dish, spread corn chips in a thick layer. Top with the beef & bean mix, then scatter cheese generously over the top.

Bake – Place under a hot grill/oven for 5–7 mins, until the cheese is bubbling and golden.

Top it off – Finish with dollops of sour cream and guacamole, scatter fresh coriander, and add an extra drizzle of chipotle sauce if you love heat.
