Ruby Grapefruit and Avocado Salad with Honey-Lime Dressing

Ingredients:

  • 2 Ruby grapefruit, peeled and segmented
  • 1 ripe avocado, sliced
  • 1 cup baby spinach or rocket (arugula)
  • ½ cup thinly sliced red onion
  • ⅓ cup pomegranate seeds (optional, for extra sweetness)
  • ¼ cup toasted almonds or walnuts
  • ¼ cup crumbled feta cheese (optional)
  • Fresh mint leaves, for garnish

For the Honey-Lime Dressing:

  • 2 tbsp fresh lime juice
  • 1 tbsp honey
  • 3 tbsp extra virgin olive oil
  • ½ tsp Dijon mustard
  • Salt & black pepper, to taste

Instructions:

  1. Prepare the dressing: In a small jar, whisk together the lime juice, honey, Dijon mustard, and olive oil. Season with salt and pepper. Set aside.
  2. Assemble the salad: In a large bowl or platter, layer the baby spinach, grapefruit segments, avocado slices, and red onion.
  3. Add crunch & flavour: Sprinkle over the toasted nuts, pomegranate seeds, and crumbled feta.
  4. Dress & serve: Drizzle the honey-lime dressing over the salad, gently toss, and garnish with fresh mint leaves.
  5. Enjoy!
