Ingredients:
- 2 Ruby grapefruit, peeled and segmented
- 1 ripe avocado, sliced
- 1 cup baby spinach or rocket (arugula)
- ½ cup thinly sliced red onion
- ⅓ cup pomegranate seeds (optional, for extra sweetness)
- ¼ cup toasted almonds or walnuts
- ¼ cup crumbled feta cheese (optional)
- Fresh mint leaves, for garnish
For the Honey-Lime Dressing:
- 2 tbsp fresh lime juice
- 1 tbsp honey
- 3 tbsp extra virgin olive oil
- ½ tsp Dijon mustard
- Salt & black pepper, to taste
Instructions:
- Prepare the dressing: In a small jar, whisk together the lime juice, honey, Dijon mustard, and olive oil. Season with salt and pepper. Set aside.
- Assemble the salad: In a large bowl or platter, layer the baby spinach, grapefruit segments, avocado slices, and red onion.
- Add crunch & flavour: Sprinkle over the toasted nuts, pomegranate seeds, and crumbled feta.
- Dress & serve: Drizzle the honey-lime dressing over the salad, gently toss, and garnish with fresh mint leaves.
