Moroccan Beef and Chickpea Bowls
Serves 3 to 4
Ingredients - (included)
1 x Grass Fed Beef Mince 500g
1 x Lebanese Marinade
1 x Chickpeas 400g
1 x Cherry Truss Tomatoes - halve
1 x Spanish Onion - slice fine
1 x Baby Spinach 100g
1 x Lebanese Cucumbers - halve and then 1cm slices
Method
1. Brown half the onion in the pan with some olive oil, add the mince and brown off. Once the its starting to brown combine with Lebanese marinade.
2. When the mince is cooked through, turn to low and cover.
3. Combine chickpeas, cherry truss tomatoes, baby spinach, cucumber with the remaining spanish onion.
4. Serve the mince along with the salad. Dig in
*I dress the salad with lemon juice, white wine vinegar and coriander. However if you dont like coriander, use parsley.
**Have big eaters? Combine theres with a side of brown rice or my bahat potatoes.
