🥒 Cucumber Sesame Salad with Rice Wine Vinegar

📝 Ingredients

  • Thai cucumber, thinly sliced on the diagonal

  • 1 red chilli, finely sliced (optional for heat)

  • 2–3 tbsp Dimples pre-made Ginger & Rice Wine Vinegar dressing

  • Dimples sesame seed & eschalot mix 

  • A small handful of fresh coriander leaves, roughly torn

  • Sea salt, to taste


🥗 Method

  1. Prep the cucumbers: Slice cucumbers thinly and place in a large bowl. Sprinkle with a pinch of salt, toss gently, and let sit for 5 minutes to draw out excess water. Drain any liquid.

  2. Build the salad: Add chilli to the cucumber.

  3. Dress it up: Drizzle with the Dimples ginger & rice wine vinegar dressing. Toss gently until everything is coated.

  4. Top & serve: Scatter over sesame seed mix and fresh coriander leaves just before serving.


💛 Tips

  • Serve chilled as a side with our Beef Rendang

  • Add crushed roasted peanuts for extra crunch if you like.

  • Make it ahead: Prep everything and add the dressing + coriander just before serving to keep it crisp.
