📝 Ingredients

Thai cucumber, thinly sliced on the diagonal

1 red chilli, finely sliced (optional for heat)

2–3 tbsp Dimples pre-made Ginger & Rice Wine Vinegar dressing

Dimples sesame seed & eschalot mix

A small handful of fresh coriander leaves, roughly torn

Sea salt, to taste
🥗 Method

Prep the cucumbers: Slice cucumbers thinly and place in a large bowl. Sprinkle with a pinch of salt, toss gently, and let sit for 5 minutes to draw out excess water. Drain any liquid.

Build the salad: Add chilli to the cucumber.

Dress it up: Drizzle with the Dimples ginger & rice wine vinegar dressing. Toss gently until everything is coated.

Top & serve: Scatter over sesame seed mix and fresh coriander leaves just before serving.
