Slow-cooked comfort meets Thai-inspired flair in our One Tray Kaeng Kari Lamb Shanks. Fall-apart free-range lamb shanks are gently braised in a rich, fragrant yellow curry sauce, infused with coconut milk, bone broth concentrate, kaffir lime leaf, and tamarind for a perfect balance of creamy, tangy, and aromatic flavours.

Paired with golden potatoes that soak up every drop of the luscious sauce and vibrant morning glory, this dish brings depth and warmth to every bite. Finished with a fresh garnish of Thai basil, coriander, chilli, and crushed peanuts, it delivers a satisfying crunch and fragrant lift.

Simply slow cook in the oven, serve, and enjoy‚restaurant-quality Thai comfort food made easy.

Note: supplied raw and requires cooking

1. Preheat the oven to 160°C fan forced or 180c if not.

2. Place shanks and potatoes in a tray and kaffir lime leaf, add one cup of water. Cover with foil and bake for 1 hour.

3. Remove foil, add Curry Sauce, turn the shanks and potatoes, recover with foil and bake for a further hour.Remove foil and return to the oven for 1 hour to 90 mins, until the meat can be pulled apart with two forks. Turning the shanks every 30 mins.


4. In the last 10 mins add water spinach (roughly chopped)Serve, garnishing with peanuts, thai basil, coriander and chopped chilli.
