Mexican Skirt Steak (Arrachera)
Ingredients

Skirt steak 
- 
Mexican paste 
- 
2 tbsp olive oil 
- 
Salt & pepper 
Method
- 
Marinate – In a bowl, mix Mexican paste, olive oil, salt & pepper. Coat skirt steak well, cover, and marinate for at least 30 mins (overnight is best for deeper flavour). 
- 
Bring to room temp – Before cooking, let the steak sit out for 20 mins. 
- 
Cook the steak – Heat a grill or heavy pan on high until smoking hot. Cook skirt steak for 3–4 mins each side for medium-rare (depending on thickness). 
- 
Rest – Transfer steak to a board, cover loosely with foil, and rest for 5–7 mins. 
- 
Slice & serve – Slice thinly against the grain for maximum tenderness. 
Serving ideas
- 
Serve with warm tortillas, pico de gallo, guac, and chipotle mayo for authentic tacos 🌮 
- 
Plate up with Mexican rice & charred corn 🌽 
-
