Wide, fresh rice noodles are delicious—but they can be a bit dramatic. One wrong move and they’ll snap before you even hit the pan. But don’t stress—broken noodles are normal (even your favourite Char Kway Teow from the local does it). The goal isn’t perfection—it’s deliciousness.
Here’s how to keep them in one piece (mostly):
1. Fresh is best
Freshly made noodles that haven’t hit the fridge yet? Gold. But realistically, the chilled packs from Dimples or your local Asian grocer will do the job. They’re still way more forgiving than dried noodles.
2. Warm before working
Give them a little heat love before separating. We recommend:
– A quick zap in the microwave, or
– A gentle rinse under warm tap water.
Absolutely do not: soak in boiling water or yank them apart cold from the fridge—unless you’re into noodle confetti.
3. Go easy in the wok
We know wok tossing is half the fun, but go gentle. The less you stir, the fewer noodles you'll break.
4. Toss like a pro
If you're feeling confident, toss those noodles mid-air like a true Wok Star. If not, a combo of spatula and wooden spoon with a light touch does the trick.
