Fresh, crunchy and just the right amount of zing β this spicy cucumber salad is the perfect sidekick to your bulgogi or grilled meats. Ready in minutes, gone even faster.
What Youβll Need:

2 Lebanese cucumbers (or 1 continental)

1 tsp salt

1β2 tsp Korean chilli flakes (gochugaru)

1 clove garlic, finely chopped

1 spring onion, sliced

1 tsp sugar
-
1 tsp rice vinegar
-
1 tsp soy sauce
-
1 tsp sesame oil
-
1 tsp toasted sesame seeds
How to Make It:

Salt & Soften
Slice cucumbers thinly and toss with salt. Let them sit for 10β15 mins to draw out water. Pat dry or gently squeeze to remove excess liquid. -
Mix the Magic
In a bowl, stir together chilli flakes, garlic, spring onion, sugar, vinegar, soy sauce, sesame oil and sesame seeds. -
Toss & Chill
Add cucumbers to the bowl, toss well, and let it sit for a few minutes so the flavours settle in. Even better chilled.
